I am just copy and pasting a bunch of runs and my notes. It may be helpful to someone.

1.

16:28 – Finished Thermo in DOPS
 
16:51 - +19ltrs in boiler
 
17:15 - +19 ltrs in boiler, thumper charged with water.
 
18:32 – Flame on.
 
18:37 – Check condenser AOK.
 
Boiler temp = 20 Deg C
 
19:10 - Boiler @ 50 Deg C
 
19:50 – It's away........... stream straight up!
 
Boiler @ 88 Deg C
 
20:00 - @ 60% ABV
 
20:24 - @ 52% Boiler @ 91 Deg C
 
Running mint, the whole system is great.
 
21:19 - @ 30%ABV Boiler @ 95 Deg C
 
21:42 – boiler @ 96 Deg C
 
22:00 – flame out

10:52 Cleaning boiler etc.
 
12:13 Doing washing, dishes, cleaning fermenters........
 
Waiting for jars to go through dishwasher.......
 
13:34 done. Ummmmm, might be a bit later than planned.....
 
14:24 Set up new gas bottle, ½ full by feel of it.
 
14:45 Flame on
 
14:50 Check condenser, AOK!
 
15:25 Condenser on
 
15:30 Boiling sounds...
 
15:32 Drips, cut the centre gas ring.
 
15:38 200ml Foreshot taken.
 
15:39 Shutdown, Sight glass leak, need to fix.
 
15:42 Restarted, leak fixed. Top of seal was dry.
 
15:43 Running good now.
 
15:50 Jar #1 @ 72% ABV
 
15:55 Jar #2 @ 70.5%
 
16:01 Jar #3 @ 69% no feijoa smells yet......
 
16:09 Jar #4 @ 69%
 
16:17 Jar #5 @ 68%
 
16:28 Jar #6 @ 67% still no Feijoa....
 
16:38 Jar #7 @ 66% I will take another jar then cut to bigger collection container, I need more jars.
 
I suppose the good thing is the ABV is staying fairly constant, so there may be flavour but needs water and sugar to bring it out as I have always suspected. I think that it could be cut down to 40-45 % at this rate with sugar water and would be mint... But I won't know till it is blended I guess.

Jar #9 Hearts vessel, about 300 – 400ml samples, as follows;

14:58 boiler charge 45ltrs, knob of butter. Waiting to do dishes then will apply flame.
 
Full molasses ferment, notes are tricky, will try and fill them in later, no reference date yet.
 
15:20 Flame on Checked condenser. All three rings.
 
A number of just about empty gas bottles lined up :)
 
I just noticed the fermenter that has about 7ltrs in the bottom is showing quite the airlock activity. That is kind of not very cool.......
 
16:09 Popped sightglass to stir in froth.
 
Cleaning up fucked Mission speaker from ****, have put the broken tweeter aside and retrofitting an infinity dome.
 
16:10 Stopped centre ring.
 
16:25 Stired foam in added more butter.
 
16:30 Condenser on
 
16:40 Stream from output 500ml foreshot to take then into common collection.
 
17:06 @ 60 odd % ABV
 
17:38 @ 55 % ABV
 
18:45 @ about fuck it I can't be bothered wasting any more gas! Not really, I will give it a while longer yet.
 
18:51 alchometer still shows 15% ABV, so I will take another couple of jars.
 
19:03 late late tails smell very pineapple.
 
19:11 Flame off

Low wines @ 42%ABV
 
Added 3 ltrs fresh wash from last ferment to low wines, fuck knows why. Will add 3ltrs from new ferment today as well
 
So that is the sort of thing I record........
